Eat these tasty treats anytime because they are an unlimited food according to the Adrenal Reset Diet. Or eat them with your meal so you can add a pop of color. There are many ways you can make roasted peppers. You can stuff them. You can top them with herbs.


You can keep things super simple and let the naturally sweet flavors of the mini peppers shine by simply roasting them. You can do this in 2 ways. You can roast them until they have slightly charred skin so they have almost a caramelized flavor. Or you can roast them only until they are soft, before they brown.

Both are delicious. And both taste very different from one another.


  1. Preheat oven to 400
  2. Line a pan with unbleached parchment paper and lightly spray with oil. (I like avocado oil because it has a neutral flavor and works well in high temperatures)
  3. Spread the peppers out on the baking sheet and lightly spray them.
  4. Toss them a little and spray again to ensure they have a light dusting of avocado oil on all sides. (LIGHT oil is key here because they are already a moist vegetable so they don’t need too much liquid or they will get soggy)
  5. Bake for 20 minutes – until soft……..OR….bake for 30-35 minutes so they caramelize
